Pizza problems and solutions: pale bases, tough dough and soggy centres

Pizza problems and solutions: pale bases, tough dough and soggy centres

The finished pizza gives useful clues. Separate dough, topping and oven problems, then change one variable for the next batch.

In this guide:

  • Dough shrinks back during stretching
  • Dough tears or spreads uncontrollably
  • The base is pale but the cheese is done
  • The middle is soggy
  • The rim is hard or the base burns
  • The pizza sticks to the peel

Diagnose the stage that failed before changing the recipe. A pale base, tight dough and watery topping can appear together, but they do not share one universal fix. Record your method so you can identify what actually helped.

Dough shrinks back during stretching

The ball may be too cold or insufficiently relaxed. Cover it and wait 10–15 minutes before trying again. Do not force it thinner or roll all the gas out if you want a raised rim.

Check the overnight schedule for enough time after refrigeration. A same-day dough also needs relaxation after balling: see the basic recipe.

Dough tears or spreads uncontrollably

Check water quantity, flour suitability and fermentation. A weak, overmature dough may tear even after long kneading. A dry dough can tear for a different reason. Look at whether it feels tight and resistant or loose and fragile.

Read the flour guide and preferment readiness. Reduce the number of variables by returning to a direct dough before adjusting a complex method.

The base is pale but the cheese is done

The baking surface may not have heated through, the topping may be too wet, or the oven position may favour the top. Follow the surface's preheating instructions and check the material comparison.

Do not add more cheese to hide a pale base. For tray pizza, staged topping helps give dough a head start. For round home-oven pizza, assess both upper and lower heat.

The middle is soggy

Drain fresh mozzarella and use thick sauce in a restrained layer. Wet vegetables need preparation appropriate to the recipe. A too-thin centre under heavy topping can remain soft even when the rim looks ready.

Use the sauce and mozzarella guide. Check that the dough is baked through before slicing; a brief rest allows steam to escape.

The rim is hard or the base burns

Problem Check Try next time
Dry, hard rim Long bake, tight dough, excessive dusting Better relaxation and heat balance
Burnt base Surface heat, shelf and flour under dough Adjust position and reduce excess dusting
Burnt top, soft base Upper heat and topping moisture Balance heat; lighten topping
Dense tray pizza Final proof and handling Allow puffing before baking

The pizza sticks to the peel

Prepare toppings first, dust lightly, assemble promptly and check movement while the peel is still away from heat. A long wait lets moisture bind dough to the surface. Do not try to launch a stuck pizza beside a hot oven without first correcting it safely.

Read peel technique and choose a peel that fits your pizza and oven in the accessory range.

What should I record?

Flour, hydration, yeast type, dough temperatures, rise times, dough-ball weight, toppings, shelf and bake time. Repeat a simple method and change one thing. The main guide and skillet recipe provide clear routes back to a manageable starting point.
