How to use a pizza peel without sticking or torn dough
A successful launch starts on the worktop. Prepare toppings, use manageable dough and test movement before taking the pizza to the oven.
Dust lightly, assemble one pizza at a time and check that it moves before approaching the hot oven. A peel helps transfer dough; it cannot fix a wet, overmature dough or an overloaded pizza.
Choose a peel that fits
Measure the oven opening, baking surface and intended pizza diameter. Check handle length and the working space in front of the oven. A larger peel is not useful if it cannot enter comfortably or turn in your kitchen.
The 30 cm perforated peel is designed for transferring pizza. The 20 cm turning peel serves a different task: moving and rotating a pizza during baking. Choose by job rather than diameter alone.
Prepare before stretching
Set out thick sauce, drained cheese and ready toppings. Keep the peel clean and dry. A hot peel can encourage dough to stick, so allow it to cool safely between tasks as the product instructions require.
Use a manageable basic dough and controlled toppings. If the ball is fridge-cold and tight, allow relaxation before trying to force it flat.
Dust with restraint
A small amount of suitable flour or fine semolina can help release, but excessive dusting burns and tastes bitter. Check your recipe and the surface. Perforations can let loose flour fall away; they do not prevent all sticking.
Stretch on the worktop, then transfer to the peel, or assemble on it if your method supports that. Keep the time on the peel short in either case.
Test movement while it is still safe
Give a small, controlled forward-and-back movement. If one spot sticks, address it away from the oven. Lift the affected edge carefully and add a little dusting underneath rather than shaking so hard that topping spills.
A torn or badly stuck pizza may be easier to rescue as a pan bake. Do not struggle with it beside a hot opening or hold a hot door open while improvising.
Transfer smoothly
Approach a ready baking surface with a clear path. Position the front edge where the far edge of the pizza should land, then use a controlled withdrawal to place it. Practise the motion cold first if it is unfamiliar.
Keep hands, sleeves and face away from heat. Follow the oven's operating instructions and use suitable protection. An oven mitt or glove has its own contact and temperature limits.
Turning and removing
Let the base set before moving the pizza. Rotate only when needed for even baking, using a tool suited to the oven and task. Remove to a stable board. Do not use a peel as an unsupported serving shelf carrying food across a crowded room.
For home-oven pizza, shelf and upper heat influence when turning is useful. A dedicated pizza oven needs its own operating method.
