Pizza flour in Hungary: understanding BL55, BL80 and 00
Hungarian flour labels can be unfamiliar if you normally shop in English. Learn what to check so you can choose flour for your own dough schedule.
Choose flour by intended use, available strength information and fermentation time. BL55, BL80 and Italian 00 are not interchangeable measures of dough strength. A label alone cannot tell you how much water a dough will handle.
A useful Hungarian shopping vocabulary
| Label | Meaning to recognise | What to check next |
|---|---|---|
| Liszt | Flour | Grain type and product description |
| Búzafinomliszt / BL55 | Fine white wheat flour | Protein and recommended use |
| Fehér búzakenyérliszt / BL80 | White wheat bread flour | Behaviour in your recipe |
| Rétesliszt | Coarser wheat flour associated with strudel | Whether it suits your dough method |
| 00 | Italian flour classification | Strength and pizza/fermentation guidance |
Hungarian type numbers relate to flour classification, including ash content; they are not W strength values. Fine texture is also a different property from protein or gluten performance.
Protein is useful, but incomplete
Compare nutrition labels when available. Protein can help you choose a starting point, but gluten quality, milling and intended use also matter. Two bags with a similar percentage may absorb water and stretch differently.
If a pizza flour lists W strength and a recommended fermentation duration, use that guidance. If it does not, begin with a manageable recipe and learn from the result rather than inventing a strength value.
Same-day and longer doughs need different decisions
For a same-day dough, moderate hydration is a practical start. For cold fermentation or preferments, choose flour suited to the longer schedule and avoid assuming every ordinary flour will remain strong for days.
00 does not automatically mean suitable for a very long fermentation. Some 00 flour is intended for different baking tasks. Read the full product label.
Adjust water cautiously
Weigh water in grams. For 500 g flour, 310 g water is 62% hydration and 325 g is 65%. Keep a small amount back if you are testing an unfamiliar flour, then add it only when the dough can take it.
A wet dough is not inherently more professional. Sticky, weak dough is harder to stretch and transfer, and can produce a disappointing bake if the method does not suit it.
Yeast words to recognise
Élesztő means yeast. Friss élesztő is fresh yeast; szárított or instant élesztő refers to dried or instant products, but read the packet's exact instructions. Sütőpor is baking powder and is not a direct replacement in these yeast-raised pizza recipes.
Use the yeast type specified in the recipe or the producer's conversion guidance. Tiny preferment quantities need a suitably precise scale.
Keep a small flour notebook
Record brand, label, water, yeast, temperature and fermentation. If one flour gives dough that tears, reduce water or shorten the schedule before buying every specialty bag.
Return to the pizza guide for the whole process. Use Dutch oven bread or focaccia when you want another way to learn dough behaviour. Once the recipe is manageable, browse pizza tools to support stretching, transfer and baking.
