Dutch oven bread: an easy loaf with a crisp crust
A covered pot helps the loaf expand before the crust browns. This recipe starts with an unheated pot, after checking that the method suits your cookware.
For one loaf, use 500 g flour, 350 g water, 10 g salt and 3 g instant yeast. The dough contains 70% water relative to flour, so use a bowl scraper and wet hands rather than adding handfuls of extra flour. Timings are guides: room temperature and flour affect rising.
Choose the pot and ingredients
Use an oven-safe covered pot large enough for the expanded loaf. Check its temperature limit and all fittings. Do not assume every enamelled pot permits empty preheating. Here the dough goes into an unheated pot, then into a preheated oven.
- 500 g bread flour or a suitable white wheat flour
- 350 g water
- 10 g salt
- 3 g instant yeast
In Hungary, look for kenyérliszt when comparing bread flour. Labels such as BL80 describe flour type, not a guarantee of performance. Read our flour guide for label context and adjust water cautiously.
Mix and build strength
- Mix flour, yeast, water and salt until no dry flour remains.
- Cover and rest for 20 minutes.
- With wet hands, lift and fold each side towards the centre. Repeat two more sets at roughly 20-minute intervals.
- Let the dough rise covered until noticeably expanded and airy, often around 2–3 hours total at approximately 22°C.
Do not wait for an exact clock time if the dough is already well aerated. A cold room needs longer; a warm kitchen needs closer observation.
Shape and finish proofing
Turn out onto a lightly floured surface. Fold towards the centre, turn over and gently tighten into a round without tearing. Put it in a supported, floured proofing bowl and cover. Allow roughly 45–75 minutes, watching for a puffier loaf that springs back slowly after a gentle touch.
Transfer carefully into the unheated pot. Use suitable baking paper only within its rated temperature and keep it away from heating elements. Score the top with a suitable sharp tool.
Bake covered, then uncover
Preheat the oven to 230°C using conventional heat. Put the covered pot and dough into the oven. Bake approximately 35–40 minutes covered, then 15–20 minutes uncovered, adjusting to loaf colour and your oven. Reduce heat if the base browns too quickly.
Use dry protection and set the hot lid on a prepared surface. The finished loaf should have a deeply coloured crust and a set interior. Let it cool on a rack for at least an hour before cutting; slicing immediately can make the crumb seem gummy.
Troubleshooting
A dense loaf can mean weak dough development or insufficient rising. A flat loaf may have overproofed or lost tension during shaping. A dark base needs a change in oven position or baking conditions, not necessarily more flour.
